It doesn’t get much better than a simple warm slice of homemade bread, fresh out of the oven, lathered with butter! My mother-in-law has been making “Better Butter” for over 30 years since Laurel’s Kitchen vegetarian cookbook was first published in 1976. It has became a favorite of mine so I thought I’d share it.

This easy recipe spreads like margarine but without the additive ingredients.

Just blend in a blender till smooth, then refrigerate. Simple as that.

The Kindle edition of The New Laurel’s Kitchen was published in December 2011 and incorporates hundreds of new recipes. Regardless of the new or old version, Laurel’s Kitchen has stood the test of time — 35 years and still going strong!
