The Whole Living website has only good things to say about the powerfood butternut squash that we used in this chili: It is rich in phytonutrients and antioxidants, low in fat AND delivers an ample dose of fiber.

“Squash’s tangerine hue, however, indicates butternut’s most noteworthy health perk. The color signals an abundance of powerhouse nutrients known as carotenoids, shown to protect against heart disease. In particular, the gourd boasts very high levels of beta-carotene (which your body automatically converts to vitamin A), identified as a deterrent against breast cancer and age-related macular degeneration.” The squash also offers protection against lung cancer and is rich in vitamins C and E. It also boasts a itself as a high fiber source of complex carbohydrates.
